Baby's First Eggplant

Time for baby to try Eggplant now that he's 8 months old. Eggplant is nutritious and has a very mild flavor so it will mix up beautifully with just about anything.

Steamed eggplant tends to become very soft and tender (and sometimes mushy) so it makes a great finger food too.

Eggplant- Basic Purée, courtesy of

1 Eggplant

1. Wash and peel eggplant.
2. Cut into 1 inch pieces and steam until tender and mushy.
3. Place into your choice of appliance for pureeing and begin pureeing.
4. Add water as necessary to achieve a smooth, thin consistency (I added about 1/2 cup of water)
