Chicken Sausage with Roasted Butternut Squash and Quinoa {Gluten-free}

Again with the roasted winter squash. It's just so good I can't stop making it. Plus, my kiddos love it. This chicken sausage is from Trader Joe's and it's casing-free. It has great flavor and goes really well with the nutty quinoa and sweet squash. This is a hearty meal that's full of satisfying protein! Click here to see my recipe. Enjoy!

What is the best way to get cubes from a raw butternut squash?

Great question! If you click through the link to my recipe you'll see my "tip" just below the recipe directions. I'll post it here as well.

"Tip: Butternut squash is a large, thick-skinned squash. To make cutting easier, slice a thin layer off the bottom to stabilize it on the counter. Then carefully, using a vegetable peeler in a downward motion, peel off the thick, waxy skin. Slice the squash in half lengthwise and scoop out the seeds and veins and chop the bright orange squash into cubes for roasting. Or many grocery stores now offer already cubed squash!"
