Our Weekly Menu 01.25.15 {Gluten-Free}

Hello! Welcome to another Weekly Menu. I hope that you find some inspiration and new ideas to try for dinner this week! I'm planning to make a double batch of Chicken Tortilla soup so I can freeze one batch for later. I love being able to pull something delicious out of the freezer for dinner on a busy night!!  Enjoy!

Our Weekly Menu {Gluten-Free} 01.18.15

Here's what we're fixing up this week. I am a big believer in Menu planning mostly because it makes dinner SO much easier! We also save money as we stick to our list and buy just what we need. This week's edition has more slow cooker recipes as we have a bit of a busy schedule. 


MONDAY: Mom's test kitchen...Shredded Vegetable Asian Chicken Salad, Buffalo Chicken Meatballs, Split Pea Soup with Ham, Cinnamon Walnut Steel cut Oats*




FRIDAY: Tacos with corn tortillas

SATURDAY: Out to Dinner!

Spinach and Mushroom Frittata {Gluten-Free}


This Frittata is similar to our Potato-Crusted Spinach Quiche recipe but without the crust, hence I'm calling it Frittata. It is so easy to make and delicious. New Mexico Hatch Green Chili Stew {Gluten-Free}


It's been just about exactly one year since we picked up and moved across the country. We love it here but we also miss California. Missing our friends and family, of course, and also all the food! Our oldest son and I often reminisce about Dos Coyotes Southwest Restaurant. Oh man is it good. If you are anywhere near Northern California...look them up. One of their amazing seasonal dishes is Hatch Green Chili Stew, which reminds me of my childhood when my family roasted Hatch chilies and made a similar stew. Since I can't get it from them I tried to recreate it.

New Mexico Hatch Chili comes from the state of New Mexico in the Hatch Valley and has a unique and full flavor. It can be purchased in specialty markets, online or in cans on the International aisle of most grocery stores. It's probably a crime but all I can get here is canned chilies...just be sure they say "New Mexico Hatch". They range in levels of heat but generally those that you buy canned are mild. If you like your stew with more spice, substitute one can of diced jalapenos in place of one of the cans of green chilies. Click over to www.type2diabetes.com to see my recipe. Our Weekly Menu {Gluten-Free} - New Year's Edition 01.01.15

Happy New Year!! I'm kicking off the New Year strong with a Weekly Menu Plan. The past two weeks we've enjoyed a blissful stay-cation of no school and no work for my hubby. I've been creating new recipes and we've been feasting on all the leftovers. I am a big believer in Menu planning and I continue to do it, with my family's input, every week and it makes dinner SO much easier! This week's edition is a bonus list starting today!! Here's to a new year filled with good food, good health and finding JOY in our everyday moments. Thanks for reading!

THURSDAY - NEW YEAR'S DAY: Snacking on fresh veggies dipped in Artichoke Hummus, Fresh Guacamole and chips and Soy-Free, Coconut-Free Teriyaki Chicken Drumsticks* 

FRIDAY: GF Crepes* for breakfast (hey it's still vacation!) and Bison Burgers over Spinach Salad for dinner



TUESDAY: Tofu Stir-Fry with Veggies

WEDNESDAY: Roasted Whole Chicken in the Slow Cooker with Steamed broccoli and Rosemary Potatoes


FRIDAY: Take Out - after what I'm sure will be a long week back in the normal routine
