Hearty Vegan Chili {gluten-free, soups, dairy-free, vegan}

I love Fall with it's cooler temperatures and amazing changing colors! This chili is hearty, delicious and full of fiber. It has all the colors and flavors of fall. You can always add your favorite meat if you prefer. I prep and chop my veggies ahead (either the night before or in the afternoon the day of) then give this chili 10 minutes of your attention and let the stove-top do the rest. Butternut Squash and Chicken Soup with Quinoa {Gluten-free}


Happy Monday! Apparently I'm on a butternut squash kick lately. What can I say, I love it and I love buying produce that's in season. It often tastes better and is more affordable. This soup reminds me a bit of the classic Chicken and Rice Soup but with a protein-packed scoop of quinoa instead.

Butternut squash can be tricky to cut. I typically slice some off the bottom so it can sit level on the cutting board. Then I peel it with a good quality vegetable peeler. Finally, slice in half lengthwise, scoop out insides and cut into cubes. Turkey Butternut Squash Chili {Gluten-free}

I just love butternut squash. It's similar to pumpkin and can easily cross the line between sweet or savory. This chili is made more delicious with the addition of butternut squash. Corn Chowder {Slow-Cooker, Gluten-Free}



The ultimate comfort food, at least for me. Last year when I was recovering from surgery, several friends brought meals for our family. It was so nice to not have to worry about dinner and an added bonus to have amazing food delivered. I mean it was really good! One friend brought corn chowder, it was my first real meal, and I thought I had never tasted something so delicious. Amazing! Sweet Potato Chili {Gluten-Free, Slow Cooker}



For those of you on Facebook and Twitter who asked for more Slow Cooker meals...here ya go!  I know I know, this sounds a bit different but trust me it's amazing! I opted to use savory grass-fed ground beef for this because it really bumps up the flavor and the sweet potatoes add just the right amount of sweetness without being too overbearing. Just brown up the meat and throw everything into your slow cooker! Sweet potatoes add fiber, Vitamin A, Vitamin C and a new delicious flavor for chili. Easy Mixed Bean Soup {Gluten-Free}

This soup is full of flavor and healthy fiber! It's a great way to use a leftover ham bone or you can always add some diced ham instead. Or skip the ham altogether if you want it to be vegetarian. Can't get much more affordable than this either. Dried beans are inexpensive and easy to keep in your pantry for a rainy day. Just soak them overnight. New Mexico Hatch Green Chili Stew {Gluten-Free}


It's been just about exactly one year since we picked up and moved across the country. We love it here but we also miss California. Missing our friends and family, of course, and also all the food! Our oldest son and I often reminisce about Dos Coyotes Southwest Restaurant. Oh man is it good. If you are anywhere near Northern California...look them up. One of their amazing seasonal dishes is Hatch Green Chili Stew, which reminds me of my childhood when my family roasted Hatch chilies and made a similar stew. Since I can't get it from them I tried to recreate it.

New Mexico Hatch Chili comes from the state of New Mexico in the Hatch Valley and has a unique and full flavor. It can be purchased in specialty markets, online or in cans on the International aisle of most grocery stores. It's probably a crime but all I can get here is canned chilies...just be sure they say "New Mexico Hatch". They range in levels of heat but generally those that you buy canned are mild. If you like your stew with more spice, substitute one can of diced jalapenos in place of one of the cans of green chilies. Click over to www.type2diabetes.com to see my recipe. Pumpkin Chili with Hominy and Kale {Gluten-Free, Dairy-Free}

Beef and Vegetable Stew in the Slow Cooker {Gluten Free}


Looking for a warm and hearty stew to make in the slow cooker? This one is super tasty and the kids loved it. You can also use a beef chuck roast, which I have done when they go on sale two for one at the grocery store.  Additionally, you can always add other vegetables such as carrots, parsnips or turnips.  Serve this up with some of our gluten-free biscuits on the side and enjoy!

Recipe: (serve 4 or if you use more meat up to 6)
Ingredients:
1-1.5 pounds Beef stew meat, very lightly salted (or you can also use a beef chuck roast 1 1/2-2 pounds - no need to cube it)
2 tablespoons White Rice Flour
6-8 small (lime sized) golden or red potatoes, leave whole (half if larger)
3-4 stalks celery, sliced
1/2 white onion, sliced into large chunks - Save the other half of the onion using this trick
1 teaspoon Italian Seasoning
1/2 teaspoon dried thyme, rolled gently between fingers to release the oils
1/4 teaspoon garlic powder
1 teaspoon salt
5 1/2 - 6 cups water
8 oz whole, baby Bella mushrooms, rinsed

2 tablespoons white rice flour
1/3 cup water

Directions:
1.  Heat a large pan over medium high heat, add beef cubes and begin to brown on all sides, about 2-3 minutes.


Sprinkle beef with about 2 tablespoons of white rice flour and flip to coat all sides and continue browning about 2-3 minutes more. We're looking for nice browning on the meat, not cooked through.
2. While meat is browning, add potatoes, celery, onion, Italian Seasoning, thyme, garlic powder and salt to the slow cooker.
3. Once meat is browned on both sides, remove from pan and add to the slow cooker on top of the vegetables.  Add about 1/2 cup of water to the hot pan and deglaze it, gently stir up all the yummy bits from the bottom of the pan.

After about 1 minute, pour the liquid from the pan over the meat.

4. Arrange mushrooms over top of the meat.  Add additional 5 - 5 1/2 cups of water, or until meat is nearly covered in water.
5.  Cook on low for 8-10 hours.  About 1 hour before serving, combine 2 tablespoons rice flour with about 1/3 cup of water and add mixture to the slow cooker to thicken your sauce.  Season to taste.  Serve hot with some gluten-free biscuits on the side.

{Make ahead} For those days you know you will be busy, even too busy to brown the meat for the slow cooker...Follow all the directions through number 4, place lid on the slow cooker and refrigerate overnight.  If your slow cooker does not have a silicone seal, you may want to cover it with plastic wrap before putting the lid on to prevent your fridge from smelling like onions.  The next day pull the slow cooker out of the fridge about an hour before you plan to start cooking, then turn it on and cook as per #5 above.
