Corn Chowder {Slow-Cooker, Gluten-Free}



The ultimate comfort food, at least for me. Last year when I was recovering from surgery, several friends brought meals for our family. It was so nice to not have to worry about dinner and an added bonus to have amazing food delivered. I mean it was really good! One friend brought corn chowder, it was my first real meal, and I thought I had never tasted something so delicious. Amazing! Shredded Pork Tacos {gluten-free}



Tacos are a very popular dinner in our house. We use gluten-free corn tortillas, warmed on the stove-top to soften. It's perfect because everyone can personalize their taco with the toppings they like and we still achieve our goal of making one meal for everyone! Shredded pork that's tender and flavorful makes a fun new filling for tacos. We often have seasoned ground turkey in our tacos, which is tasty, but it can get old. MONDAY: Potato Kale Soup from our freezer stash with Homemade Coconut Biscuits - subbing in ground chia in the biscuits instead of egg

TUESDAY: Gluten-free Spaghetti with Turkey Meat Sauce and a big green salad

WEDNESDAY: Pumpkin Chili in the Slow Cooker with Light and Fluffy gluten-free Cornbread

THURSDAY: Take out (Yay!)

Chicken Parmesan Sandwiches with Grilled Zucchini {Easy Dinner}

This is the ultimate comfort food sandwich yet much leaner than a traditional meatball sub. You can always skip the crusty roll and serve the savory chicken on a gluten-free roll or right on top of a salad or a bed of fresh spinach. This make a large sandwich! I typically eat 1/2 a sandwich and pile on the veggies and salad. Enjoy!

Recipe: (serves 4-6)
Ingredients
4 crusty rolls (optional)
4 chicken breasts
2 large zucchini, sliced lengthwise
1/2 cup of your favorite marinara sauce
4-6 ounces of mozzarella cheese, sliced
Parmesan cheese
salt and pepper

1. Preheat grill.
2. Warm a grill pan over medium heat. Lightly season zucchini strips with salt and pepper and grill flat-side down for 5-7 minutes, flipping once, until zucchini is crisp-tender. Set aside.



3. Grill chicken on hot grill for 5-7 minutes per side or until it reaches an internal temperature of 165 degrees and is no longer pink. Allow chicken to rest.
4. Preheat oven to BROIL.
5. Spread a couple tablespoons of marinara on top of each chicken breast and top with 1-2 slices of mozzarella cheese.
6. Broil on a baking sheet for 2-3 minutes, watching very closely!, until cheese is melted and golden. Sprinkle each one with Parmesan cheese
7. Serve chicken in a crusty roll along side grilled zucchini and a fresh green salad.

Sweet Potato Chili {Gluten-Free, Slow Cooker}



For those of you on Facebook and Twitter who asked for more Slow Cooker meals...here ya go!  I know I know, this sounds a bit different but trust me it's amazing! I opted to use savory grass-fed ground beef for this because it really bumps up the flavor and the sweet potatoes add just the right amount of sweetness without being too overbearing. Just brown up the meat and throw everything into your slow cooker! Sweet potatoes add fiber, Vitamin A, Vitamin C and a new delicious flavor for chili. Tilapia is a light and flaky fish that isn't too overpowering in it's flavor. In other words, it's not a very "fishy" fish. You can substitute any mild white fish that you prefer in this recipe. Slow Cooker Orange Chicken {Gluten-Free}


Who doesn't love orange chicken?  This is a great option for Make Your Own Take Out {MYOTO}at home! It does it's thing in the slow cooker and then just thicken up the remaining liquid at the end for a delicious sauce to drizzle on top. I used gluten-free tamari in place of the soy sauce when I made it for my family, but either one works great. It was fabulous with some fresh steamed broccoli and sprouted brown rice.
