Our Weekly Menu {Gluten-Free} 8.21.16

Welcome to Our Weekly Menu! I haven't done one of these posts in forever. Never fear though, we've still been menu planning each week. Even if our little homemade board says, "leftovers, snacky dinner (aka: clean out the fridge) and take out" I still write something on there. I love the piece of mind it gives me to not stress over dinner at 5pm.

Only two more weeks of summer for us. I'm a little sad but also looking forward to the routine of school. We'll be out and about most of the day this Thursday, so a slow cooker meal is in order. If any night is going particularly crazy, you rest assured I'll be calling in that "once-a-week-take-out" card for my awesome hubby to pick up food on his way home from work. That's another perk to menu planning, you can always switch it around as needed.


SUNDAY: Lettuce-Wrap Burgers and Potato Chips at the lake. Whenever we're home and it's not storming, we head to our beach for dinner at the lake. It's one of my most favorite summer traditions!

MONDAY: Bruchetta Chicken with Spinach Salad and Garlic Bread

TUESDAY: Flank Steak Salad with Strawberry Watermelon Salsa

WEDNESDAY: Turkey Taco Lettuce Cups 

THURSDAY: Slow Cooker Mushroom Honey-Mustard Chicken with Steamed Broccoli

FRIDAY: take out! Yeah baby!

SATURDAY: Sushi night! Avocado-Cucumber and Chicken Teriyaki rolls

Our Weekly Menu {Gluten-free} 10.24.15

Welcome to Our Weekly Menu! We're looking forward to a fun night with friends this Sunday for Family Dinner then a couple easy Slow Cooker nights and a fun party on Saturday, which means no cooking for me that night! Yay! Hope you all are enjoying fall where you are. We are loving the cool Michigan temps and amazingly beautiful bright leaves and all the soups and stews this mama can make. Yum. I cleaned out my whole closet on Thursday night/Friday and had so much fun pulling out my cozy sweaters and lining up my boots for fall. Have a blessed week friends, filled with delicious food! Enjoy!

SUNDAY: Family Dinner Night at our house - Everyone is bringing a pot of chili! I'll be making my Pumpkin Chili and also some Gluten-free cornbread muffins and green salad to go with it.

MONDAY: Taco Soup in the Slow Cooker

TUESDAY: Crust-less Barbecued Chicken Pizza

WEDNESDAY: Honey-Mustard Chicken* (Slow cooker) with Jasmine Rice and Roasted Vegetables

THURSDAY: Chicken Vegetable Stew

FRIDAY: Take Out!!

SATURDAY: Halloween Party Out! No cooking for us. Yay! If you are hosting a party this week or need an idea of what to bring to a party...Try my super cute and healthy Jack 'O Lantern Fruit Plate! It's always a big hit with kids and adults!!!

Our Weekly Menu {gluten-free} 08.16.15








Meal planning is rough sometimes. It doesn't always come easy. There are days I feel like my brain is done thinking of new dinner ideas and my family doesn't feel like helping. I'm blessed that my hubby often cooks on the weekends and on those nights when I just can't come up with anything, I cave and call it a "snacky dinner" night or play my "take out" card. Those nights work too. If you're looking for some ideas and inspiration I hope that this will be that for you, but know that we struggle too and I need all the help I can get. Here's hoping that the time we all spend planning our meals ahead will make for a smoother week. Have a fabulous week!

Our Weekly Menu {Gluten-Free} 08.02.15


Here's what we're fixing up this week! I started this blog at the encouragement of a friend 5 years ago to catalog and share our family recipes. It's been a fun way to practice photography too (especially when the subject isn't moving). It's even helped me get a paid job as a work-from-home Dietitian, creating recipes and helping others with their nutrition questions. I hope that by sharing our recipes and our weekly menu plans that you will be inspired and encouraged to try some new meals. I'd love to hear what is on the menu for each of you this week! Our Weekly Menu {Gluten-Free} 6.28.15

Hope you all are enjoying your summer! We sure are having fun and looking forward to some camping trips, beach days and relaxing afternoons. It's easy for us to get relaxed in the summer and neglect meal planning but I find that if we take a few minutes, as a family, to plan out our week's dinners, I can relax even more during the week and our grocery bill stays in check. I like to plan easy slow cooker meals when I know we'll be at a playdate or the Splash pad all afternoon and plan our "one-take-out-per-week" night for an especially busy day. Here's what we're fixing up this week. What are your favorite summer go-to recipes?

SUNDAY: Bison burgers with avocado and a spinach salad

MONDAY: Slow Cooker Paleo Chicken and Veggie Bowls

TUESDAY: Take Out!!!

WEDNESDAY: Shredded Vegetable Asian Chicken Salad
*You can buy a premade kale slaw mix and rotisserie chicken for this to make it super summer-friendly and easy!

THURSDAY: Taco Salad

FRIDAY: Chicken Pesto Pizza with Sun-Dried Tomatoes

SATURDAY: Fourth of July! We'll be visiting friends for swimming and a Barbecue. If you're the one hosting and you're looking for ideas, try fixing up my Buffalo Chicken Meatballs to start things off then J's Turkey Burgers, with Oven Roasted Corn on the Cob, French-Style Potato SaladSalad Skewers, and No-Bake Lemon Coco-Roons for dessert. MONDAY: Potato Kale Soup from our freezer stash with Homemade Coconut Biscuits - subbing in ground chia in the biscuits instead of egg

TUESDAY: Gluten-free Spaghetti with Turkey Meat Sauce and a big green salad

WEDNESDAY: Pumpkin Chili in the Slow Cooker with Light and Fluffy gluten-free Cornbread

THURSDAY: Take out (Yay!)

Our Weekly Menu 02.08.15 {Gluten-Free}


It's another Weekly Menu Planning day! Our family is gathered around the lunch table after church and the dinner ideas are flowing. I love to get the kids involved in the planning, one, because they are actually really helpful with their ideas and two, because they are more likely to be excited about helping in the kitchen and eating the meals that they suggested. Excited for my hubby's delicious homemade pizza tonight! Looking forward to an early Valentine's Day celebration later this week with my sweet. Happy meal planning!

MONDAY: Going to adapt our Turkey Chili into a sweet potato variation with Gluten-Free Corn Bread



THURSDAY: Date Night! Celebrating Valentine's early!!  Kids will be having their fav frozen pizza and salad
These amazing Chocolate Coco-Roons are the perfect Valentine's Day treat.

Our Weekly Menu 01.25.15 {Gluten-Free}

I'm planning to make a double batch of Chicken Tortilla soup so I can freeze one batch for later. Here's what we're fixing up this week. I am a big believer in Menu planning mostly because it makes dinner SO much easier! We also save money as we stick to our list and buy just what we need. This week's edition has more slow cooker recipes as we have a bit of a busy schedule.

Our Weekly Menu {Gluten-Free} - New Year's Edition 01.01.15

Happy New Year!! I'm kicking off the New Year strong with a Weekly Menu Plan. The past two weeks we've enjoyed a blissful stay-cation of no school and no work for my hubby. I've been creating new recipes and we've been feasting on all the leftovers. I am a big believer in Menu planning and I continue to do it, with my family's input, every week and it makes dinner SO much easier! This week's edition is a bonus list starting today!! Here's to a new year filled with good food, good health and finding JOY in our everyday moments. Thanks for reading!

THURSDAY - NEW YEAR'S DAY: Snacking on fresh veggies dipped in Artichoke Hummus, Fresh Guacamole and chips and Soy-Free, Coconut-Free Teriyaki Chicken Drumsticks* 

FRIDAY: GF Crepes* for breakfast (hey it's still vacation!) and Bison Burgers over Spinach Salad for dinner



TUESDAY: Tofu Stir-Fry with Veggies

WEDNESDAY: Roasted Whole Chicken in the Slow Cooker with Steamed broccoli and Rosemary Potatoes

Our Weekly Menu 2.23.14 {Gluten-Free}

Hello there!  Here's what we're fixing up this week.  There isn't much better than enjoying my hubby's homemade gluten-free pesto pizza on a Sunday night.  He made a double batch of pesto for me to use on Wednesday's pasta and always tries to make enough pizza for left-over's so we get to enjoy it again on Monday for lunch.  Hope you are having a great week and that these recipes may help inspire you for dinner tonight!

Our Weekly Menu {Gluten Free}

We've made the move from California to Michigan and in the middle of January no less.  Let's just say the weather is very different.  Aside from being snowed in a few days, we are loving it!  It's been such a fun experience so far.  We are hopefully going to close on our house this week and be able to move in soon.  Once we're unpacked and settled I plan to do some more recipe testing and more posting here. Our Weekly Menu {Gluten Free} 03.03.13

FRIDAY: take out with a side of veggies from our Farm Fresh to You CSA box

SATURDAY: making & delivering a Taco Dinner to another sweet family who just had a baby!  So the boys will be feasting again on some variation of turkey, beans and tortillas (I'll be making a big batch), while I go out with friends for Ladies Night Out!
