Taco Stuffed Zucchini {Gluten-free}

Broccoli Kale Salad with Grilled Chicken {Gluten-free}
This salad is delicious, fresh and full of great nutrients!! Don't be afraid of the fact it contains NO lettuce! Kale and broccoli and Brussel sprouts are fabulous when chopped finely and they bring a great crunch. Top it off with grilled chicken to elevate it into a satisfying meal. If you don't have the time to chop the greens yourself, look for a pre-packaged mix at the store, just be mindful of the dressing. Taco Soup {Gluten-free, Slow Cooker}
What can I say, I love soups, even in summer. I know it's a bit crazy to all my California friends and family that are roasting hot in the summer heat...maybe you can tuck this one away for a cooler day. Here in Michigan, the summer days are mild and afternoon thunderstorms are common. As long as I don't have to turn on the oven, I'm good! Thai Pork Salad {Gluten-Free, Salads}

Our Weekly Menu {Gluten-Free} 6.28.15
Hope you all are enjoying your summer! We sure are having fun and looking forward to some camping trips, beach days and relaxing afternoons. It's easy for us to get relaxed in the summer and neglect meal planning but I find that if we take a few minutes, as a family, to plan out our week's dinners, I can relax even more during the week and our grocery bill stays in check. I like to plan easy slow cooker meals when I know we'll be at a playdate or the Splash pad all afternoon and plan our "one-take-out-per-week" night for an especially busy day. Here's what we're fixing up this week. What are your favorite summer go-to recipes?
SUNDAY: Bison burgers with avocado and a spinach salad
MONDAY: Slow Cooker Paleo Chicken and Veggie Bowls
TUESDAY: Take Out!!!
WEDNESDAY: Shredded Vegetable Asian Chicken Salad
*You can buy a premade kale slaw mix and rotisserie chicken for this to make it super summer-friendly and easy!
THURSDAY: Taco Salad
FRIDAY: Chicken Pesto Pizza with Sun-Dried Tomatoes
SATURDAY: Fourth of July! We'll be visiting friends for swimming and a Barbecue. If you're the one hosting and you're looking for ideas, try fixing up my Buffalo Chicken Meatballs to start things off then J's Turkey Burgers, with Oven Roasted Corn on the Cob, French-Style Potato Salad, Salad Skewers, and No-Bake Lemon Coco-Roons for dessert. Easy One-Pot Mexican Rice {gluten-free}

Summer Recipe Round-Up {Gluten-Free, Easy Dinners, No oven required}
Needing some inspiration myself, I decided to put a quick list together of some of our favorite HOT weather favorites (with pictures of course because I love a visual). When it's warm outside, I try hard to come up with meals that don't require me to use the oven (the grill outside is fine though!) and heat up the inside of the house any more than it already is. Don't be afraid of your slow cooker though! The slow cooker is good for more than soup! It's a great way to get amazing flavors without using the oven. Think meats, tender and flavorful to stuff tacos or soft rolls. Mmmm. What are your favorite summer time recipes? I'd love to add to my list.

Corn Chowder {Slow-Cooker, Gluten-Free}
The ultimate comfort food, at least for me. Last year when I was recovering from surgery, several friends brought meals for our family. It was so nice to not have to worry about dinner and an added bonus to have amazing food delivered. I mean it was really good! One friend brought corn chowder, it was my first real meal, and I thought I had never tasted something so delicious. Amazing!
