Broccoli Kale Salad with Grilled Chicken {Gluten-free}
This salad is delicious, fresh and full of great nutrients!! Don't be afraid of the fact it contains NO lettuce! Kale and broccoli and Brussel sprouts are fabulous when chopped finely and they bring a great crunch. Top it off with grilled chicken to elevate it into a satisfying meal. If you don't have the time to chop the greens yourself, look for a pre-packaged mix at the store, just be mindful of the dressing. You may be better off substituting your own favorite dressing instead of using the store-bought one. Find my recipe at type2diabetes.com.
