Our Weekly Menu {gluten-free} 08.16.15

Meal planning is rough sometimes. It doesn't always come easy. There are days I feel like my brain is done thinking of new dinner ideas and my family doesn't feel like helping. I'm blessed that my hubby often cooks on the weekends and on those nights when I just can't come up with anything, I cave and call it a "snacky dinner" night or play my "take out" card. Those nights work too. If you're looking for some ideas and inspiration I hope that this will be that for you, but know that we struggle too and I need all the help I can get. Here's hoping that the time we all spend planning our meals ahead will make for a smoother week. Have a fabulous week!

Low-carb Beef Chili {Gluten-free, Slow Cooker}

Tuck this recipe away for a cool fall day. So flavorful and savory after bubbling away in the slow cooker. Serve it up with a fresh cool salad for a delicious dinner combo. Click over to type2diabetes.com to see my recipe. Enjoy!

Chicken Caesar Salad with Greek Yogurt Dressing {Gluten-free}

I love a hearty salad for dinner, especially during warmer weather. This is a lightened up Caesar salad with an easy homemade dressing. Don't be afraid of anchovies, (I used to be) they add a delicious salty depth of flavor that is classic Caesar. Sliced almonds on top bring the perfect crunch. See my recipe here at type2diabetes.com. Enjoy! ...click here for the recipe!

Flank Steak Salad with Strawberry Watermelon Salsa {Gluten-free, Salads, Steak}

For those of you who think we only eat poultry (mom). We do enjoy the occasional homemade hamburgers and sometimes steak. Flank steak is pretty lean and if overcooked becomes tough quickly. This was a tasty salad hearty enough for dinner and still light for a warm summer day. The salsa turned out so sweet and flavorful and that with a fresh squeeze of lime, worked great instead of dressing. See my recipe at type2diabetes.com. Enjoy! ...click here for the recipe!

Baked Chicken Fajitas {Gluten-free}

We love fajitas in our family! That's my hubby's go-to dish when we eat out because it's typically not smothered in cheese and can easily be eaten with corn tortillas for a delicious gluten-free, dairy-free meal. I rarely make them at home because I feel like they take too long to prepare. Until now. Just throw all your spices onto uniformly sliced chicken and veggies (which you can cut up ahead of time and store in the fridge) and bake them all together. They turned out great and everyone asked that I make them again! For those of you with more zucchini than you know what to do with, I've made these with strips of zucchini too, and they're awesome. Click over to type2diabetes.com for my recipe. Enjoy!

Please Note: Type2diabetes.com has officially switched over to a .com from .net. Super exciting news!! I'm slowly working through updating my links. If you come across a link to the type2diabetes page that doesn't work, just replace the ".net" with ".com". If that still doesn't work leave a comment or touch base with us on our Facebook page. I will get to them all soon.

Our Weekly Menu {Gluten-Free} 08.02.15

Here's what we're fixing up this week! I started this blog at the encouragement of a friend 5 years ago to catalog and share our family recipes. It's been a fun way to practice photography too (especially when the subject isn't moving). It's even helped me get a paid job as a work-from-home Dietitian, creating recipes and helping others with their nutrition questions. I hope that by sharing our recipes and our weekly menu plans that you will be inspired and encouraged to try some new meals. I'd love to hear what is on the menu for each of you this week! Please share.

TUESDAY: Gluten-Free Spaghetti with Chicken Sausage and Roasted Broccoli
