Turkey Lettuce Wraps with Fresh Pineapple Salsa {Gluten-Free, Dairy-free, Grain-free}

Fresh and zippy, these turkey tacos are wrapped in lettuce instead of tortillas. I must confess I'm not a fan of pineapple but I've made it a point to not pass any pineapple aversions onto our kids. My awesome hubby came up with this salsa and my peeps love them some pineapple! I had my lettuce wraps with our fresh salsa instead and they were delicious. French-Style Potato Salad {Gluten-Free, Dairy-free}

Our Weekly Menu 02.08.15 {Gluten-Free}


It's another Weekly Menu Planning day! Our family is gathered around the lunch table after church and the dinner ideas are flowing. I love to get the kids involved in the planning, one, because they are actually really helpful with their ideas and two, because they are more likely to be excited about helping in the kitchen and eating the meals that they suggested. Excited for my hubby's delicious homemade pizza tonight! Looking forward to an early Valentine's Day celebration later this week with my sweet. Happy meal planning! 

SUNDAY: Homemade Pizza

MONDAY: Going to adapt our Turkey Chili into a sweet potato variation with Gluten-Free Corn Bread



THURSDAY: Date Night! Celebrating Valentine's early!!  Kids will be having their fav frozen pizza and salad
These amazing Chocolate Coco-Roons are the perfect Valentine's Day treat.

Easy Mixed Bean Soup {Gluten-Free}

This soup is full of flavor and healthy fiber! It's a great way to use a leftover ham bone or you can always add some diced ham instead. Or skip the ham altogether if you want it to be vegetarian. Can't get much more affordable than this either. Dried beans are inexpensive and easy to keep in your pantry for a rainy day. Just soak them overnight. Buffalo Chicken Meatballs {Gluten-Free}

I'm not a huge fan of wings but I do love the flavor combinations! This is my take on the great flavors of Buffalo Chicken wings made into tasty bite-sized meatballs!  The dipping sauce is made with light and lean Greek yogurt and has a bit of a zing!  Serve these up with the classic celery sticks and you'll have a game day or party day appetizer that everyone will love.
