Chicken Taco Soup {Gluten-free, Dairy-free}


This is an easy recipe for a tasty dinner. I love the lean shredded chicken in this for something different. The kids love personalizing their toppings! Try topping this with fresh avocado slices, diced red onion, broken tortilla chips, shredded cheese and sour cream or plain Greek yogurt. Delicious! Click over here to see my recipe. Enjoy!

Love how easy this is! The only real chopping are the add-ins! The recipe says to "cube" the chicken. Yet your intro and picture talk about shredded chicken. No doubt either way works but I'm thinking if I want the chicken shredded I would need to cook it separately and pull it apart, "shred" it, and add it to the pot. I can't think of a way to get the shredded look when adding it raw. Right?

Oh I love this feedback so much miles7191! It doesn't make any sense that I said "cubed" when the picture clearly shows shredded chicken. The truth is you can do it either way. It's perfectly fine to add whole, raw chicken breasts directly to the soup to cook. You may need to add to your cooking time a bit and always be sure your chicken is cooked through to an internal temp of 165'F. Pull the cooked chicken out, shred it and then return to the soup.
