Our Weekly Menu {Gluten-Free} 6.28.15

Hope you all are enjoying your summer! We sure are having fun and looking forward to some camping trips, beach days and relaxing afternoons. It's easy for us to get relaxed in the summer and neglect meal planning but I find that if we take a few minutes, as a family, to plan out our week's dinners, I can relax even more during the week and our grocery bill stays in check. I like to plan easy slow cooker meals when I know we'll be at a playdate or the Splash pad all afternoon and plan our "one-take-out-per-week" night for an especially busy day. Here's what we're fixing up this week. What are your favorite summer go-to recipes?

SUNDAY: Bison burgers with avocado and a spinach salad

MONDAY: Slow Cooker Paleo Chicken and Veggie Bowls

TUESDAY: Take Out!!!

WEDNESDAY: Shredded Vegetable Asian Chicken Salad
*You can buy a premade kale slaw mix and rotisserie chicken for this to make it super summer-friendly and easy!

THURSDAY: Taco Salad

FRIDAY: Chicken Pesto Pizza with Sun-Dried Tomatoes

SATURDAY: Fourth of July! We'll be visiting friends for swimming and a Barbecue. If you're the one hosting and you're looking for ideas, try fixing up my Buffalo Chicken Meatballs to start things off then J's Turkey Burgers, with Oven Roasted Corn on the Cob, French-Style Potato SaladSalad Skewers, and No-Bake Lemon Coco-Roons for dessert. Or if you're looking for something to bring to a potluck, scroll through our Appetizer Inspiration.
