Overnight Vanilla Chia Pudding {easy, gluten-free, breakfast, snack}


I was SO skeptical that I would even like this. I was pleasantly surprised and I really love it! It's really tasty! It took me a fair amount of trial and error to find the right ratio for the perfect creamy pudding texture. Also, be sure to wait the 5 minutes and give it a good shake to help distribute the chia seeds evenly, it makes all the difference! We drink Organic unsweetened almond milk so that's what I used, but cow's milk or any other non-dairy milk substitutes, such as oat milk, rice milk or soy milk, would work also. Perfect Hard Boiled Eggs {How-to}

My kids love hard boiled eggs and they are perfect for school lunch or snack! They help fill my boys up, which is sometimes hard to do. School Lunch Inspiration {Re-post}

     Some of you may already have started back to school but school starts next week for us and I'm having mixed emotions. I love summer. The warmth (especially appreciate this now that we live in a snowy winter climate), fun, laid back routines, lazy mornings, lazy afternoons, swimming, exploring, flip flops, shorts, evening walks by the lake, late night sunsets, lots of time with friends and lots of time with my boys... While I'm excited for them to start back to school, I'm dragging my feet a bit during these last days of summer.
   
     I've had several people ask me about school lunches so I thought this was a perfect time to repost these ideas. I wrote this back when we had just moved cross-country and were homeschooling. Here's to another new season! Let's start strong with our lunch game mamas and dads and make it great! I'll be a little more intentional with my grocery run this weekend as I meal plan for lunches and Our Weekly Menu. Planning ahead feels like more work up front but it REALLY pays off. Strawberry Almond Butter Toast {Easy Peasy}

This is hardly a recipe but more of an inspiration. As I try to cut back on my sugar intake I've been experimenting with adding fresh fruit to my toast instead of sugary jam or jelly. This is seriously so yummy and sweet. Delicious with more vitamins, antioxidants, fiber, and way less sugar. Give it a try. Also super tasty with raspberries and blackberries! Easy Microwave Omlet {Gluten-free, Easy, Breakfast}

I have had some requests for EASY recipes, like microwave easy. This is a fun and quick way to whip up a hot and healthy breakfast if you're running short on time. You can use this same method for our Breakfast Egg Sandwich. I love to mix this up with all different mix-ins! Tuna Salad Lettuce Wraps {Gluten-free, Dairy-free, easy}

Baked Chicken Fajitas {Gluten-free}

We love fajitas in our family! That's my hubby's go-to dish when we eat out because it's typically not smothered in cheese and can easily be eaten with corn tortillas for a delicious gluten-free, dairy-free meal. I rarely make them at home because I feel like they take too long to prepare. Until now. Just throw all your spices onto uniformly sliced chicken and veggies (which you can cut up ahead of time and store in the fridge) and bake them all together. They turned out great and everyone asked that I make them again! For those of you with more zucchini than you know what to do with, I've made these with strips of zucchini too, and they're awesome. Summer Recipe Round-Up {Gluten-Free, Easy Dinners, No oven required}


Needing some inspiration myself, I decided to put a quick list together of some of our favorite HOT weather favorites (with pictures of course because I love a visual). When it's warm outside, I try hard to come up with meals that don't require me to use the oven (the grill outside is fine though!) and heat up the inside of the house any more than it already is. Don't be afraid of your slow cooker though! The slow cooker is good for more than soup! It's a great way to get amazing flavors without using the oven. Oven Roasted Corn on the Cob {So easy}

Happy summer everyone!  Hope you are enjoying the final weeks of summer.  We are in the thick of swim lessons, splash parks, longing to go back to our beach vacation and thinking about getting ready for school to start.  On our recent vacation we enjoyed fresh roasted corn in the husk from a street vendor at a Farmer's Market and loved the simplicity of it.  It's a super duper easy way to cook up all that delicious corn that's in season now. I love using the husks themselves instead of wasting foil, genius, and this way they never char!  We don't put a single thing on fresh roasted corn but if you like to, you can add salt, pepper or butter after they're done.  Give it a try tonight!

Recipe
Ingredients:
corn on the cob in their husks

Directions:
1. Preheat oven to 350'F.  Trim extra leaves from corn husks {the long skinny green ones} but leave main husk completely in tact.
2. Place corn directly on the oven rack and bake at 350'F for 30-40 minutes until it just slightly gives to the touch when you squeeze it {while wearing an oven mitt}.  The husk will turn slightly golden.
3. Let cool slightly then peel back your husk and enjoy your perfectly cooked corn
