Roasted Butternut Squash Soup {Gluten-free, Vegan, Dairy-Free}
Roasting vegetables (& fruits) brings out so much flavor and that is evident in this easy and delicious soup. It's creamy and thick without any cream or any dairy at all in fact. It's great for entertaining as it can be made in advance and it's perfect for a passed appetizer in a tea cup or shot glass with a sprinkle of sprouted pumpkin seeds on top.
