Hope you all are enjoying your summer! We sure are having fun and looking forward to some camping trips, beach days and relaxing afternoons. It's easy for us to get relaxed in the summer and neglect meal planning but I find that if we take a few minutes, as a family, to plan out our week's dinners, I can relax even more during the week and our grocery bill stays in check. I like to plan easy slow cooker meals when I know we'll be at a playdate or the Splash pad all afternoon and plan our "one-take-out-per-week" night for an especially busy day. Here's what we're fixing up this week. What are your favorite summer go-to recipes?

I just love the flavors in this dish and so does my family! Beans and rice and crunchy corn are so tasty and the addition of seasoned ground turkey helps to bump up the protein and round this out for an entree! Pair it with a giant green salad for a delicious summer dinner. Click over to

The ultimate comfort food, at least for me. Last year when I was recovering from surgery, several friends brought meals for our family. It was so nice to not have to worry about dinner and an added bonus to have amazing food delivered. I mean it was really good! One friend brought corn chowder, it was my first real meal, and I thought I had never tasted something so delicious. Amazing! Tacos are a very popular dinner in our house. We use gluten-free corn tortillas, warmed on the stove-top to soften. It's perfect because everyone can personalize their taco with the toppings they like and we still achieve our goal of making one meal for everyone! Shredded pork that's tender and flavorful makes a fun new filling for tacos. We often have seasoned ground turkey in our tacos, which is tasty, but it can get old. I like to mix it up with different fillings and I especially love it when the slow cooker cooks for me! Click over to

I love the simplicity of serving this in a mason jar for a brunch buffet or for a quick breakfast on the go.
