Slow-cooker Beef with Garlic Mashed Turnips {Gluten-free}
This recipe is a great way to transform an inexpensive cut of meat into something tender and delicious. I buy beef stew meat in bulk then divide it into freezer bags in 1 1/2 pounds each and freeze them for later. These mashed turnips pair wonderfully with the meat and they are just like making mashed potatoes, except lower in carbs. Serve some fresh steamed broccoli or a green salad on the side!
Turnips are round root vegetables that are purple and white with green leaves on top, for those who aren't sure. ;-)

Korean Beef with Quinoa {Gluten-free}
My family loves this recipe! They ask me to make it nearly every time we make up our Weekly Menu. It's the perfect combination of sweet and savory! For this recipe, I kept it simple with just beef and quinoa, but typically I add a mound of fresh steamed broccoli alongside as well because that just screams delicious take out to me. Chicken Stuffed Mushrooms with Guacamole {Gluten-free, Dairy-free, Low-carb, Paleo}
Looking for a new appetizer idea? I know we have a few holiday parties coming up and I like to have an allergy-friendly winner in my pocket. These are really easy to make and even more delicious to eat! If you plan to bring them along to a party you're attending, you can either opt to make them at the party house (ya know if it's your family or close friends) or you can prepare the mushrooms ahead, per the recipe and just hold off on the guac and onions. Bring the guac along in an airtight container or in a dish with plastic wrap pressed directly onto it to avoid browning. Just ask to warm the mushrooms slightly in the oven (4-6 min) then top each one with guac and onions. Easy! These are really light, healthy and delicious! A new take on a stuffed mushroom! This is an ultra flavorful and ultra light dinner recipe, perfect for getting back on track after a long holiday weekend of eating all the foods. I love to serve this with gluten-free pasta for my growing boys and hungry hubby or over zucchini noodles, which are really tasty and light. This is one of my favorite things to make for a Friday night! If I haven't used my 1-take-out-per-week-card or if I'm saving it for Saturday, I like something delicious and EASY! Peanut Butter Yogurt Dip {Gluten-free, PB2, appetizer, Party Fare}
This is such a tasty dip and with fewer calories and fat than straight peanut butter you feel much better about eating it! It uses peanut butter powder, which is such a cool product! It's peanut butter that has been pressed to remove the oil and fat. You simply re-hydrate it with warm water ,or in this case yogurt, and bam, delicious peanut flavor without all the calories. Welcome to Our Weekly Menu! We're looking forward to a fun night with friends this Sunday for Family Dinner then a couple easy Slow Cooker nights and a fun party on Saturday, which means no cooking for me that night! Yay! Hope you all are enjoying fall where you are. We are loving the cool Michigan temps and amazingly beautiful bright leaves and all the soups and stews this mama can make. Yum. I cleaned out my whole closet on Thursday night/Friday and had so much fun pulling out my cozy sweaters and lining up my boots for fall. Have a blessed week friends, filled with delicious food! Our Weekly Menu {gluten-free} 08.16.15
Meal planning is rough sometimes. It doesn't always come easy. There are days I feel like my brain is done thinking of new dinner ideas and my family doesn't feel like helping. I'm blessed that my hubby often cooks on the weekends and on those nights when I just can't come up with anything, I cave and call it a "snacky dinner" night or play my "take out" card. Those nights work too. If you're looking for some ideas and inspiration I hope that this will be that for you, but know that we struggle too and I need all the help I can get. Chicken Caesar Salad with Greek Yogurt Dressing {Gluten-free}

Flank Steak Salad with Strawberry Watermelon Salsa {Gluten-free, Salads, Steak}
For those of you who think we only eat poultry (mom). We do enjoy the occasional homemade hamburgers and sometimes steak. Flank steak is pretty lean and if overcooked becomes tough quickly. This was a tasty salad hearty enough for dinner and still light for a warm summer day. Baked Chicken Fajitas {Gluten-free}
We love fajitas in our family! That's my hubby's go-to dish when we eat out because it's typically not smothered in cheese and can easily be eaten with corn tortillas for a delicious gluten-free, dairy-free meal. I rarely make them at home because I feel like they take too long to prepare. Until now. Just throw all your spices onto uniformly sliced chicken and veggies (which you can cut up ahead of time and store in the fridge) and bake them all together. They turned out great and everyone asked that I make them again! For those of you with more zucchini than you know what to do with, I've made these with strips of zucchini too, and they're awesome. Our Weekly Menu {Gluten-Free} 08.02.15
Here's what we're fixing up this week! I started this blog at the encouragement of a friend 5 years ago to catalog and share our family recipes. It's been a fun way to practice photography too (especially when the subject isn't moving).
